Dairy Free Coffee Creamer

4 cups water
1/4 cup cashews
1/4 cup pistachios

pinch of salt

Instructions:
Begin by gathering all the ingredients listed above: 4 cups of water, 1/4 cup of cashews, 1/4 cup of pistachios, 1/2 cup of almonds, 2 pitted Medjool dates, a pinch of salt, and 1/2 tsp of almond extract.
In a medium-sized bowl or container, combine the water and all the nuts. Cover the bowl and let it soak overnight. Soaking the nuts will help soften them, allowing for easier blending later on.
After the soaking time is complete, transfer the soaked nuts and water into a blender. Add the pitted dates, pinch of salt, and almond extract to the blender as well.
Blend the mixture on high speed for approximately 1-2 minutes, or until it reaches a smooth and creamy consistency.

Once strained, transfer the coffee creamer into a clean glass jar or airtight container. Store it in the refrigerator to keep it fresh and extend its shelf life. This stays good 5-7 days.
