EASY GLUTEN-FREE PASTA SALAD

This pasta salad is the ultimate lunch or dinner that hits all of these qualifications. This recipe is high in fiber, protein and antioxidants. Furthermore, this gluten-free pasta will contribute to a healthier gut!

With the addition of vegetables and olive oil, the final outcome of this meal delivers NUTRIENTS and MORE NUTRIENTS

If you wish to make this your dinner, you can just top it off with some chicken for a more filling meal. 

Are you ready to try this nutrient-dense meal? 

Ingredients

  • Red lentil pasta or chickpea

  • 1 English cucumber 

  • Sliced tomatoes (approx. 5 cherry tomatoes)

  • 1/2 a red onion 

  • Sea salt, pepper, oregano & red pepper flakes to taste

  • Extra virgin olive oil & balsamic vinegar to taste (I use Palmetto Olive Oil Co.)

  • OPTIONAL: grilled chicken breasts

Directions

  1. Throw your red lentil pasta or chickpea into a pot with boiling water, add sea salt to taste and let it cook until you get your consistency of preference.

  2. While your pasta is cooking, slice the English cucumber into small squares, and do the same with the tomatoes and red onion.

  3. When your pasta is ready, serve it on your plate and add the cucumber, tomatoes and red onion.

  4. Mix all of your ingredients well.

  5. Add sea salt, pepper, oregano & red pepper flakes to taste.

  6. Add the extra virgin olive oil & balsamic vinegar to serve as your dressing.

  7. If you are including chicken, add your grilled chicken breast at the very top.

  8. Enjoy!
