GLUTEN-FREE PUMPKIN MUFFINS

These gluten-free pumpkin muffins are as delicious as they are full of nutrients. They contain healthy fats, and are high in fiber and protein. And the most important part: They are gluten-free!

Ingredients

  • Granola

  • 2 cups oat flour

  • 1/4 cup fresh ground flaxseed

  • 2 tsp. pumpkin spice

  • 1 tsp. vanilla

  • 1/2 tsp. salt

  • 1/2 tsp. baking soda

  • 1/3 cup maple syrup

  • 1 1/4 cups organic pumpkin

  • 1 stick butter (melted)

  • 2 eggs

  • 1 cup dark cacao chocolate chips

Directions

  1. Grind two cups of oats until they turn into flour.

  2. Measure the flour again to make sure there are two cups. Once measured, throw the oat flour into a large bowl.

  3. Throw the rest of the ingredients (flaxseed, pumpkin spice, vanilla, salt, baking soda, maple syrup, organic pumpkin and butter) into that same bowl.

  4. Beat two eggs, and add them to the bowl with the rest of the ingredients.

  5. Mix all the ingredients until well-incorporated.

  6. Add chocolate chips to the mix, and stir again.

  7. Scoop out the mix to fill the oven-ready muffin pan. Make sure to fill it about 2/3 so they don’t overflow.

  8. Top the muffins with pecans, dark cacao chocolate chips, or other topping of choice.

  9. Introduce the muffins into the oven for about 20-25 minutes at 350 °F.

  10. Once ready, pull them out of the oven, and let them cool down for a couple of minutes.

  11. Time to satisfy that sweet craving!
