Gluten-Free Banana Pancakes

Ingredients:

4 eggs

2 ripe bananas

3 cups old fashioned oats

1/4 cup maple syrup

4 tbsp butter (melted)

1/4 cup water

4 teaspoons baking powder

2 pinches of salt

Instructions

  1. In a blender or food processor, combine the eggs, ripe bananas, old fashioned oats, maple syrup, melted butter, water, baking powder, and salt. Blend until smooth.

  2. Heat a non-stick skillet or griddle over medium heat. If necessary, lightly grease the skillet with cooking spray or a small amount of butter.

  3. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

  4. Carefully flip the pancakes and cook until golden brown on the other side, about 1-2 minutes more.

  5. Repeat with the remaining batter, adjusting the heat if necessary to prevent burning.
