JELLY BLOSSOM COOKIES

Ingredients (for 24 cookies)

  • 3 cups of almond flour

  • 1 cup of oat flour

  • 1/2 cup butter (coconut oil for vegan)

  • 1/2 cup made syrup or honey

  • 2 1/2 tsp. of vanilla extract

  • 1/2 tsp. of sea salt

  • Naturally sweetened (or fruit-sweetened) jelly (this is for the filling).

Directions

  1. Combine all ingredients (except jelly) in a mixing bowl and blend with hand mixer.

  2. Use a small cookie scoop, scoop out dough into baking sheet covered with parchment paper.

  3. Form into cookies and use thumb to press center for the jelly. Fill center with jelly (1/2 tsp. each)

  4. Bake at 350 °F for 12-15 minutes or until the edges start to brown.
