JELLY BLOSSOM COOKIES
Ingredients (for 24 cookies)
3 cups of almond flour
1 cup of oat flour
1/2 cup butter (coconut oil for vegan)
1/2 cup made syrup or honey
2 1/2 tsp. of vanilla extract
1/2 tsp. of sea salt
Naturally sweetened (or fruit-sweetened) jelly (this is for the filling).
Directions
Combine all ingredients (except jelly) in a mixing bowl and blend with hand mixer.
Use a small cookie scoop, scoop out dough into baking sheet covered with parchment paper.
Form into cookies and use thumb to press center for the jelly. Fill center with jelly (1/2 tsp. each)
Bake at 350 °F for 12-15 minutes or until the edges start to brown.
