Pumpkin Pie Waffles

Deliciously spiced and packed with pumpkin flavor, these Pumpkin Pie Waffles are a delicious breakfast. With the option to easily make them vegan, these waffles are versatile and cater to various dietary preferences. Get ready to indulge in a stack of fluffy waffles that taste like fall! 🎃

Ingredients:

- 3/4 cup gluten-free flour (Bob's Red Mill recommended)

- 1/2 cup buttermilk (or plant-based milk for vegan option)

- 1/2 tsp baking powder

- 1/4 tsp salt

- 1/4 tsp cinnamon

- 1/2 tsp pumpkin spice

- 1 cup pumpkin puree

- 2 tsp sucanat (or preferred sweetener)

- 1/2 tsp vanilla extract

- 1/2 tsp almond extract

- 1 egg (or flax egg for vegan option)

- 2 tbsp butter (melted, or coconut oil for vegan option)

Instructions:

1. In a mixing bowl, combine the gluten-free flour, baking powder, salt, cinnamon, and pumpkin spice.

2. In a separate bowl, whisk together the buttermilk (or plant-based milk), pumpkin puree, sucanat, vanilla extract, almond extract, egg (or flax egg), and melted butter (or coconut oil for vegan option).

3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

4. Preheat your waffle iron according to its instructions.

5. Pour the batter onto the preheated waffle iron, using the recommended amount for your waffle iron size.

6. Close the waffle iron and cook until golden brown and crispy.

7. Remove the waffle from the iron and repeat with the remaining batter.

8. Serve the pumpkin pie waffles warm with your favorite toppings, such as maple syrup, whipped cream, or fresh fruit.

Note: To make the waffles vegan, simply swap the buttermilk for plant-based milk, use a flax egg instead of a regular egg, and replace the butter with coconut oil. Enjoy!
