CHOCOLATE-COVERED BANANAS

Healthy desserts don’t have to be “boring” or “flavorless.” In fact, these covered-bananas are quite the opposite.

They taste just like ice cream! The only difference is these are actually healthy and doing something good for our bodies.

Ingredients

  • 3 ripe bananas

  • 2/3 cup dark chocolate chips (my fav is Hu Gems)

  • 1 tbsp. coconut oil

  • 6 popsicle sticks


Topping suggestions:

  • your favorite nuts, chopped

  • shredded coconut 

Directions

  1. Peel and slice bananas in half. Line a baking sheet with parchment paper. Insert the popsicle sticks about 1/2 of the way, reaching the center of the bananas. Place in freezer for about 4 hours (or overnight). 

  2. After bananas are frozen and ready, prepare the chocolate for dipping. In a small sauce pan, melt chocolate and coconut oil. Use a gentle heat, stirring often until smooth. Many directions suggest the double boiler method, I happen to have a heavy duty sauce pan meant for this specifically. Chocolate can burn easily, so keep that in mind when preparing it. 

  3. Now it’s time to dip the bananas. Remove them from the freezer and start to dip them in the chocolate, one at a time. They will set up quickly, so roll the dipped banana in toppings immediately and place back on parchment paper. 

  4. Place the covered bananas back in the freezer and allow time for them to freeze (about an hour). Place the bananas in an airtight container and return to the freezer. Frozen bananas can be stored for up to 3 months.

  5. Enjoy!
