Ezekiel Flour Waffles

These waffles are amazing and a complete protein, covering all essential nutrients when topped with butter and peaches. Ezekiel waffles are high in fiber and protein, and is a healthy carb and fat. The Ezekiel mix comes from Ezekiel 4:9-10 - this flour kept Ezekiel's mind sharp and sustained him for 390 days. Now that is nutrient dense!

Ingredients:

  • 3 cups fresh milled Ezekiel flour [Click here for the flour recipe]

  • 1 tsp salt

  • 1 tsp baking soda

  • 2 1/2 tsp baking powder

  • 1/3 cup olive oil (recommended: Palmetto Olive Oil, Cobrancosa)

  • 4 eggs

  • 3 cups buttermilk

  • 2 tsp sucanat (optional)

Instructions:

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together the Ezekiel flour, salt, baking soda, and baking powder.

  2. Add Wet Ingredients: In a separate bowl, beat the eggs and then add the buttermilk and olive oil. Mix until well combined.

  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid over-mixing.

  4. Soak: Let the batter sit for 15-30 minutes. This allows the flour to fully absorb the liquids, resulting in fluffier pancakes.

  5. Cook Waffles: Preheat a griddle or non-stick skillet over medium heat. Lightly grease with oil or butter. Pour 1/4 cup of batter for each waffle onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown.
