HEALTHY CREPES

There’s nothing quite like a freshly-made crepe. However, most crepes available at restaurants don’t hit the mark when it comes to nutritional value, and oftentimes, it is quite the opposite. Unfortunately, many of the ingredients that the traditional recipe calls for can be harmful to the body.

But don’t fret yet! This healthy and homemade crepes recipe hits the mark nutritionally without compromising the original delicious flavor.

Ingredients

  • 1 cup whole wheat flour

  • 2 eggs, room temp.

  • 2 tsp. honey crystals (or coconut sugar)

  • 1 cup nut milk 

  • 1 tbsp. melted butter

Directions

  1. Add all of the ingredients to a blender, and blend them until getting a smooth consistency.

  2. Heat a pan to medium heat, and then add butter to coat the pan.

  3. As soon as the butter is melted, pour a thin layer of batter into the pan ( just like you would with a pancake).

  4. Flip when the bottom is golden brown and then brown the other side. 

  5. Once perfect golden brown on both sides, lay the crepe on a paper towel to help absorb any remaining oil. 

  6. Serve immediately or refrigerate for later. 

  7. To freeze, place parchment paper between each crepe and put it in a storage container.
