Homemade Healthy Muffins

Looking for a delicious and nutritious muffin recipe? These muffins were made from fresh milled flour and have clean ingredients. I love how flavorful these muffins are and how they are the perfect snack to add into your day.

Ingredients:

  • 1 egg

  • 1/2 cup oil

  • 1 cup buttermilk

  • 2 1/4 cups fresh milled flour

  • 1 tsp salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 3/4 cup sucanat

  • 1/4 cup fresh ground flax seed

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a large mixing bowl, beat the egg.

  3. Add oil and buttermilk to the beaten egg, and mix well.

  4. In a separate bowl, sift together the fresh milled flour, salt, baking powder, and baking soda.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. Fold in the sucanat and fresh ground flax seed until evenly distributed throughout the batter.

  7. Spoon the batter into greased or lined muffin tins, filling each about 2/3 full.

  8. Bake in the preheated oven for 12-16 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

  9. Makes approximately 12-16 muffins, depending on the size of your muffin tin. Adjust baking time accordingly for larger or smaller muffins.
