Ingredients:1 egg1/2 cup oil1 cup buttermilk2 1/4 cups fresh milled flour1 tsp salt1 tsp baking powder1 tsp baking soda3/4 cup sucanat1/4 cup fresh ground flax seedInstructions:Preheat your oven to 350°F (175°C).In a large mixing bowl, beat the egg.Add oil and buttermilk to the beaten egg, and mix well.In a separate bowl, sift together the fresh milled flour, salt, baking powder, and baking soda.Gradually add the dry ingredients to the wet ingredients, stirring until just combined.Fold in the sucanat and fresh ground flax seed until evenly distributed throughout the batter.Spoon the batter into greased or lined muffin tins, filling each about 2/3 full.Bake in the preheated oven for 12-16 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.Makes approximately 12-16 muffins, depending on the size of your muffin tin.
