KIMBERLY’S FAVORITE GRANOLA

The name says it all: this is my favorite granola. Why? The answer is simple. This granola is delicious, healthy, and it makes a great breakfast, snack or dessert. I enjoy eating it like cereal with my favorite nut milk and sliced bananas. You can also add it on top of yogurt, a drizzle of honey, and blueberries!

This recipe is high in fiber, healthy fats and protein.

Ingredients

  • 4 cups rolled oats

  • 1/2 cup chopped raw almonds 

  • 1/2 cup chopped raw pecans

  • 1/4 cup pepitas 

  • 1 teaspoon sea salt 

  • 2 teaspoon cinnamon 

  • 1/2 cup melted coconut oil

  • 1/2 cup maple syrup

  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine all ingredients and stir well.

  3. Spread the mix evenly on the parchment paper. 

  4. Bake until golden brown for about 20-25 minutes, stirring halfway (you should start to smell the fragrance when it is about ready).
