One-Pot Chili Dinner
Hello! This one-pot chili has been a go to for me and my family. Try out this hearty, flavorful chili made with grass-fed beef, kidney beans, and a blend of spices, all cooked in one pot for a satisfying meal!
Ingredients:
1 tbsp butter, divided
1 lb grass-fed beef
1 onion, diced
1 red bell pepper, diced
3 cloves garlic, diced
1 can organic corn, drained
2 cans dark red kidney beans, drained and rinsed
1 can diced tomatoes
1 can tomato sauce
1 1/4 cup organic chicken broth
4 tbsp chili powder
Jalapeno salt (to taste)
2 tsp ground cumin
1 tsp oregano
1/4 - 1/2 tsp cayenne pepper
1/2 tsp salt
Topping Suggestions:
Avocado
Additional diced onion
Diced tomato
Cheese
Greek yogurt
Tortilla chips (I recommend Siete Maize)
Instructions:
Sauté Vegetables: In a large pot, melt 1/2 tablespoon of butter over medium heat. Add the diced onion, red bell pepper, and garlic. Sauté for about 5 minutes, until the vegetables are soft and fragrant.
Add Ground Beef: Add the remaining 1/2 tablespoon of butter to the pot, then stir in the ground beef. Season with salt and pepper, and cook until the beef is browned, breaking it apart as it cooks.
Add Seasonings: Stir in the chili powder, jalapeno salt, ground cumin, oregano, and cayenne pepper. Mix well to coat the beef and vegetables in the spices.
Add Chicken Broth: Pour in the chicken broth and bring the mixture to a simmer.
Add Remaining Ingredients: Stir in the drained corn, kidney beans, diced tomatoes, and tomato sauce. Mix everything together.
Simmer: Reduce the heat to low and let the chili cook for 20-30 minutes, stirring occasionally, to allow the flavors to meld together.
Serve: Ladle the chili into bowls and top with your favorite toppings, such as avocado, extra onion, tomato, cheese, and Greek yogurt. Serve with Siete Maize tortilla chips on the side for extra crunch. Enjoy!
