One-Pot Gut Healthy Spanish Rice Recipe
I love how delicious and flavorful this meal was, it's one I often find myself making regularly!
Ingredients:
2 cans Spanish rice
1 can corn
2 cans chicken breast, shredded
1 can black beans, drained
1 jar enchilada sauce
1 can fire-roasted diced tomatoes
Salt and pepper, to taste
1 package chili seasoning
Optional toppings: Lettuce, onion, cheese, tortilla chips
Instructions:
Combine Ingredients: In a large pot, add the Spanish rice, corn, shredded chicken, black beans, enchilada sauce, fire-roasted tomatoes, and chili seasoning. Stir well to combine.
Season: Add salt and pepper to taste.
Simmer: Cook over medium heat, stirring occasionally, until the soup is heated through and the flavors are well combined.
Serve: Ladle the soup into bowls and top with your choice of lettuce, onion, cheese, and tortilla chips.
Tip: I always use organic ingredients when possible! This is a fantastic dish to make when you're hosting a large crowd. It’s easy to double or triple the recipe to feed everyone. Enjoy!
