One-Pot Gut Healthy Spanish Rice Recipe

I love how delicious and flavorful this meal was, it's one I often find myself making regularly!

Ingredients:

  • 2 cans Spanish rice

  • 1 can corn

  • 2 cans chicken breast, shredded

  • 1 can black beans, drained

  • 1 jar enchilada sauce

  • 1 can fire-roasted diced tomatoes

  • Salt and pepper, to taste

  • 1 package chili seasoning

  • Optional toppings: Lettuce, onion, cheese, tortilla chips

Instructions:

  1. Combine Ingredients: In a large pot, add the Spanish rice, corn, shredded chicken, black beans, enchilada sauce, fire-roasted tomatoes, and chili seasoning. Stir well to combine.

  2. Season: Add salt and pepper to taste.

  3. Simmer: Cook over medium heat, stirring occasionally, until the soup is heated through and the flavors are well combined.

  4. Serve: Ladle the soup into bowls and top with your choice of lettuce, onion, cheese, and tortilla chips.

Tip: I always use organic ingredients when possible! This is a fantastic dish to make when you're hosting a large crowd. It’s easy to double or triple the recipe to feed everyone. Enjoy!
