Protein Packed Salad

Here is an option that is super quick and is a nutrient powerhouse covering an abundance of micros and all the macros. When choosing a protein, always go for the clean options.

Ingredients:

For the Salad:

  • Handful of mixed greens

  • 1/4 cup red onions, thinly sliced

  • 1/4 cup goat cheese, crumbled

  • 1/4 cup blueberries

  • 1/4 cup walnuts, chopped

  • 1/2 cup grilled chicken breast, sliced

  • Handful of Mary's Gone Crackers, crumbled

For the Dressing:

  • 2 tbsp garlic olive oil

  • 1 tbsp balsamic vinegar

Instructions:

  1. Prepare the Ingredients:

    • Thinly slice the red onions.

    • Crumble the goat cheese.

    • Chop the walnuts.

    • Slice the grilled chicken breast.

    • Crumble the Mary's Gone Crackers.

  2. Assemble the Salad:

    • In a large salad bowl, add the mixed greens.

    • Top with red onions, goat cheese, blueberries, walnuts, grilled chicken, and crumbled crackers.

  3. Make the Dressing:

    • In a small bowl, whisk together the garlic olive oil and balsamic vinegar.

  4. Dress the Salad:

    • Drizzle the dressing over the salad and toss gently to combine.
