TACO SOUP
Apart from being full of protein and fiber, this taco soup recipe is perfect for a hectic day (or week)!
Taco soup takes me back to when my kids were in school. I remember how easy it was to pack this meal up in a crock pot and take it during play week.
This is also an ideal meal for those unexpected family gatherings since it is very easy to throw together and can feed a large crowd without spending too much. Moreover, when there are some extra guests, it just takes a few extra cans of beans to throw in, and the problem is solved.

Ingredients
1 tbsp. butter
1 small onion, diced
1 lb. ground beef
1 packet of taco seasonings or 1/4 cup of DIY
1 can corn
1 can diced tomatoes (garlic & onion)
1 can chili beans
3 cans beans of choice (my favorites are black, pinto, and navy)
Directions
Melt butter and sauté onions until soft.
Set onions aside.
Brown the beef and season with salt, pepper, and garlic powder.
Add the cooked onions to the beef.
Dump in all the rest of the ingredients. No need to drain any of the cans.
Heat, stir, and enjoy!
