THE PERFECT PUMPKIN MUFFIN

Whoever said there was no such thing as perfection, has not tried this delicious pumpkin muffin recipe.

The Perfect Pumpkin Muffin recipe is a must-try during the fall season, and perfect for those people who want to satisfy their sweet tooth while staying true to their healthy lifestyle. The best part is that these muffins also make for a great breakfast!

Ingredients

STREUSEL TOPPING

  • 1/4 cup whole wheat flour

  • 1/4 butter, softened 

  • 1/4 cup raw cane sugar 

  • 1/2 tsp. cinnamon

  • 1/2 cup chopped pecans

MUFFINS (12 large muffins)

  • 2 cups whole wheat flour 

  • 1/2 tsp. salt

  • 1/2 tsp. baking powder

  • 1 tsp. baking soda

  • 3 tsp. pumpkin spice

  • 1 1/2 sticks butter, softened

  • 3/4 cup raw cane sugar 

  • 2 eggs

  • 1 (15oz) can of organic pumpkin

Directions

  1. Preheat oven to 350 °F.

  2. Oil muffin pan.

  3. Mix the topping ingredients together and set aside. 

  4. For the muffins, beat the eggs and then use a hand mixer to mix in all the other ingredients in a large bowl.

  5. Stir them all together until well incorporated. 

  6. Scoop the batter into the muffin pan, filling each cup 2/3 full.

  7. Top each muffin with a spoonful of streusel.

  8. Bake for 35 to 40 minutes, or until a toothpick comes out clean.

  9. Allow the muffins to cool in the pan for a few minutes and then transfer them to a cooling rack. 

  10. Once the muffins reach a perfect temperature, it’s time to enjoy!
