Ezekiel Muffins
A wholesome and satisfying treat that will satisfy your sweet cravings and provide a boost of energy. Made with nutritious ingredients, these muffins are perfect for breakfast, snack, or anytime you need a tasty pick-me-up.
Ingredients:
2 1/4 cups Ezekiel flour (freshly milled)
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. Cinnamon
1 tsp. Vanilla extract
1/4 tsp. nutmeg
1 cup buttermilk
1/2 C olive oil
1/3 C chopped walnuts
1/3 C raisins
1/3 C honey
1/4 C millet
1 egg
2 ripe mashed bananas
Instructions:
Mix all liquid ingredients together
Mix all dry ingredients together
Gentle mix the dry and liquid ingredients together with a wooden spoon. Mix together just until all lumps are gone and all dry ingredients are dissolved. Oil muffin pan or use muffin liners and fill 3/4 full. Bake for 15-20 minutes in a preheated oven at 400 degrees.
*Option: for fuller, well formed muffins, allow the ingredients to
soak for 1 hour or even over night in the refrigerator. You can
also increase the ovens temperature to 425 for the first 6
minutes of baking time and then lower the temperature to 400
for the final time. This helps the muffin to plump up and gives a
wonderful texture.
