DELICIOUS GINGERBREAD

For many people, the holiday season automatically means healthy diet going off the rails… but, it doesn’t have to be that way.

This gingerbread recipe is a perfect example of how almost every “traditional” recipe can be modified into a healthier one, and without having to compromise the flavor.

Enjoying the holiday season guilt-free is possible!

Ingredients

BREAD

  • 1 stick of butter

  • 1 cup honey crystals

  • 1/4 cup molasses

  • 1 tsp vanilla extract

  • 1 large egg (beaten)

  • 1 cup applesauce

  • 1 1/2 cup fresh ground wheat berries (or organic whole wheat flour)

  • 1 tsp baking soda

  • 2 tsp ground ginger

  • 2 tsp ground cinnamon

  • 1 tsp ground cloves

  • 1/2 tsp nutmeg

FROSTING

  • 4 oz cream cheese

  • 1 tsp vanilla

  • 1/4 cup honey crystals

Directions

BREAD

  1. Blend all wet ingredients together until smooth.

  2. Mix together all dry ingredients.

  3. Blend the wet ingredients with the dry ingredients and pour into an oiled and floured loaf pan.

  4. Bake at 350 °F for 50-55 min.

  5. When done baking, allow loaf to cool down for about 5 minutes and remove from pan.

FROSTING

  1. Blend all ingredients together until smooth.

  2. Top bread with the frosting after it has cooled.

  3. Enjoy!
