INSTANT POT BEEF STEW

There is nothing like a warm, delicious, and nutritious meal that doesn’t require you to be in the kitchen for hours.

This beef stew checks all of those boxes. Thanks to the Instant Pot, all you have to do is have the ingredients ready, add them into the pot, stir, and simply wait until it’s ready.

Ingredients

  • 1 1/2 lbs of stew meat

  • 4 carrots (bite-sized)

  • 1 lb potatoes (cubed)

  • 1/2 onion (medium-diced)

  • Sea salt (to taste)

  • Pepper (to taste)

  • 4 cloves garlic (minced)

  • Balsamic vinegar (between 2 tbsp. and 1/4 cup)

  • 1 1/2 tsp. thyme

  • 1 tbsp. mustard (it can be hot mustard)

  • 6-10 shakes Worcestershire sauce

  • 2 cups of chicken, vegetable, or beef broth

  • 1/2 can organic diced tomatoes

Directions

  1. Set the Instant Pot to sauté mode and put 1 tbsp of olive oil. Give it a minute to heat.

  2. In a bowl, season beef stew with salt and pepper. Toss and add into the Instant Pot.

  3. Add chopped onion into Instant Pot, and stir to avoid it from sticking to the bottom. Cook for about 3 minutes.

  4. Add minced garlic into the beef stew, and toss.

  5. Add balsamic vinegar to add extra flavor.

  6. Add carrots and potatoes into beef stew. Season with salt, pepper, and thyme.

  7. Add Worcestershire sauce into the mix.

  8. Pour in chicken broth and stir. Then, add fire roasted diced tomatoes.

  9. Put on Instant Pot lid, and turn on knob to “seal.” Then set mode to “pressure cook” for 30 minutes. After the 30 minutes, let it power down for 20 minutes.

  10. After the 50 minutes have passed, let the air out, open the lid, and serve.
