ZUCCHINI ICE CREAM

This chocolate-zucchini ice cream will surprise you with how good it is!

While you won’t be able to taste the zucchini, you will still get to enjoy its amazing benefits. Zucchini is rich in vitamins and minerals, and may help with digestion, thyroid, bone, and heart health.

Zucchini is 94% water, so it this ice cream will also help with hydration — perfect for summer!

Ingredients

  • 1/2 cup nut milk (I use coconut milk)

  • 2 cups frozen zucchini (sliced in small cubes)

  • 2 cups frozen banana slices (can drop to 1 cup depending on preference)

  • 1 tbsp. chia seed (optional, but adds omega 3’s and fiber)

  • 2 tbsp. maple syrup (can add more, especially if using less banana)



Directions

  1. First add nut milk into blender (can add more later if needed.)

  2. Add the rest of ingredients into the blender, and blend until well-incorporated.

    This will come out very thick, so I suggest using a spatula to move mixture around to help the blender out.

  3. Serve, top with dark cacao chips (or preferred toppings) and enjoy!
